Winemaking: Parcels of fruit were selected from our top producing Shiraz and Cabernet blocks and carefully handpicked before crushing into open fermenters. The use of 100% natural ferments has enhanced the flavours to create a unique combination of these two varieties. Fruit was basket pressed and matured in new French Oak for 18 months before bottling. It consists of 60% Cabernet, 40% Shiraz.

Tasting Notes: Dark purple/crimson hue, deep intensity. Blackcurrant and mulberry fruit and dark chocolate flavours, a round mouth feel and lingering tannins, with a firm, tight, savoury finish. - Sue Bell, Bellwether Wines

Winemaking: Handpicked, estate grown Padthaway Chardonnay grapes were pressed in Australia’s only Conquers press before being fermented in bottle using traditional French methods. Riddled and disgorged after 18 months, we are proud to present this premium sparkling for you to enjoy on special occasions (or just every day), served chilled with fruit, cheese or hors d’oeuvres, or as an accompaniment to a fine dining experience.

Winemaking: This dry Rosé is made from our estate grown shiraz grapes, handpicked from our Padthaway vineyard in 2016, fermented with natural yeast and stirred regularly on full lees until bottling. A wine to drink this summer, serve chilled with seafood or pasta.

Winemaking: Handpicked from our Padthaway vineyard in 2017, the fruit has been carefully handled using traditional handcrafted methods such as basket pressing. It then went through natural fermentation in French Oak, relying only on 100% natural acids to produce a beautifully balanced wine.
